Green Squash with Mint – Sounds so easy and simple. Well it is. I stumbled upon this recipe while browsing the Internet a few years ago. The link brought me to an Italian based website of traditional Sicilian dishes. I translated the recipe and added some feta cheese to the recipe and have been making it ever since
Ingredients
- 6 green squash
- ½ cup of extra virgin olive oil
- 2 cloves of garlic finely chopped
- 2 tbsp champagne vinegar
- ½ cup crumbled feta
- 1 bunch of mint chopped
- 1 tsp red pepper flake
- Salt and pepper
Procedure
Wash and trim the zucchini; slice thin and sprinkle with salt. Preheat the grill and roast the vegetables until golden brown. Transfer them to a serving dish. In a bowl combine oil, vinegar, chopped garlic, salt and pepper. Whisk until well combined, and then pour mixture over squash. Sprinkle chopped mint leaves and feta cheese, leave to marinate for two hours before serving.
